This Historic Structures Report concerns the Bread Oven (HB-7) at Hubbell Trading Post National Historic Site. Three ovens have been recorded in usage at the Hubbell Trading Post and possibly a fourth oven could have existed. The first oven located a few feet north of the remaining oven dates back to circa 1905. The second oven was located south of the first ore and occupied the same site as the remaining oven today. The first and second Hubbell ovens most likely were operated simultaneously since they were both intact in 1915 as shown in photographs PB0-13 and PB0-14. The third oven, still existing was constructed during the period between post-1925 and 1931. This oven was built over the existing foundation of the second oven and enlarged 18" on each the south and north sides. The west side (rear) shows the added foundation, but the east side (front) is considerably different from the second oven. This suggests that a new front was built forward of the old one. This report proposes to reconstruct the oven in its final version and fully operational.
